He Quit His Job to Hike the World in Search of Rare Cheeses
Hiking the world in search of rare cheeses

Trevor Warmedahl left commercial cheesemaking in Seattle to seek out traditional cheeses before they vanish. He milked yaks in Mongolia, herded 300 sheep in Georgia's Tusheti mountains, and tasted Norwegian gammelost that he admits 'wasn't for me.' He argues cheese is an edible manifestation of place, and that pastoral cheesemaking offers a sustainable response to industrialization and climate uncertainty.
The cheeses I find are always far out, made by hermit types sticking to the old ways out of sheer stubbornness.

Highly recommend G.K. Chesterton on cheese: https://www.gutenberg.org/files/9656/9656-h/9656-h.htm#link2...

Me? I'd love to travel to the home of Camembert, even though I've never been to France. A pretty mundane life goal. But it brings joy to my heart knowing people like this exist.
